So, I just bought a Nikon D50 and got a $50 coupon for Ritz Camera with it that expires in a month, so I figure I might as well use it for some good lighting. I need something portable, so I was thinking a light with an attachable diffuser and a reflector or two. If I get a light with a stand, about how high should I get it? I've also heard that softboxes work well, but is it possible to buy/make one for the regular flash? Also, if you have any favorite brands, or any specifics I should look into, it would be hugely appreciated.

Looks good. I've been exploring some studio lighting equipment too, though it's professional equipment. There are economy kits also. Of course none of this puts the $50 coupon you got to any use.
You could just purchase a 2-light kit with the use of your coupon and get the umbrellas or softboxes from ebay for cheaper.
If you don't have one, you might just want to get an external flash and an off-the-camera flash setup, instead of just buying lights. The off the camera setup will get you some nice shots w/o the need to buy lighting equipment.
