While not sculpey specific Family and Friends in Polymer Clay by Maureen Carlson is a good book discussing sculpting people from polymer clay. Creating Lifelike Figures in Polymer Clay: Tools and Techniques for Sculpting Realistic Figures By Katherine Dewey looks promising but I’ve yet to get my hands on a copy. Elena Kunin has written some books on doll making, she works with polyform products.
Susanna Oroyan's "Fantastic Figures" and other books of hers are what got me started on my doll making journey. While she doesn't specifically address jointed dolls, she goes over the techniques of dolly making with polymer clay, and others clays as well. she also talks about design, the creative process, costuming, and many other basics of dolly sculpting--would highly recommend looking into this book and her others!
