With the neck joint, I've seen doll-makers offer both options. Some people prefer a merged neck because it usually looks more natural, but the posing of the jointed neck can be pretty nice. Tender Creation dolls offers both, and I'm sure others do the same. Perhaps you could do that?

As for the 2 or 3 part body question, I love three parts myself as long as they actually function! I personally like an underbust joint and a waist joint (not a hip joint, which can look a bit odd to me). I can't quite see the waist joints she has here, but I suppose you could experiment with both options since you can print them yourself.
